Reviews: Dominex Eggplant Meatballs, Van's gluten-free waffles, Sabra Classic Hummus


Although summer is short lived, here in Pullman, WA, older homes well designed and insulated to trap in heat during winter months can really heat up with the absence of air conditioners. So, my cooking time has been shortened 20 minute meals. Among the many salads, smoothies, and cold meals my family has enjoyed, I found quite a few healthy quick dinner meals and snacks to keep everyone happy and satisfied.


While not vegan, these frozen, gluten-free eggplant meatballs are quite tasty with marinara sauce as pictured above. They require only 8-10 minutes of heating in the oven (microwave instructions included). The texture is meaty and the eggplant flavor is delicious with marinara sauce. 




A few minutes in the toaster (and 30 secs in the microwave to soften the waffles-my preference) and you will greedily devour these gluten-free & vegan waffles. These were a real treat considering how long it has been since I've eaten waffles. They are available in a variety of flavors, but most importantly the texture is moist (no liquids required to enjoy). This is one of the few advertisements at are as accurate as the picture displayed.







My husband is not a big fan of hummus. He's a hummus snob actually, and will only eat mine (his favorite being sun-dried tomato hummus), but I convinced him that this hummus was like no other he had ever tasted. His response? "You're right. This hummus taste like no other hummus I've ever tasted. I really like it." BINGO! Another way to incorporate more legumes and beans into his diet- and no cooking required. Sabra's hummus is much richer than traditional hummus it is incredibly delicious with crackers, a spread in wraps and pita breads, corn tortillas and with or without veggies. It can be enjoyed as part of dinner or as a snack. My daughter likes the creamy texture, but no the tangy lemon and garlic flavor as much so it may not be a favorite with small children.

Potato Pakoras (Potato Fritters)

This is a favorite snack in my home. It can also be enjoyed with green or tamarind chutney. Spices can be adjusted to your taste.

Ingredients:
1 cup chickpea/garbanzo flour
1 cup water or less
1 garlic clove minced
1 small piece ginger minced
1/2 tsp cumin seeds
1/2 tsp cumin powder
1 tsp coriander powder
1/4 tsp garam masala
1/4 cup cilantro chopped (opt)
1 potato sliced thinly (mandoline)
oil for deep frying (preferably peanut)

Directions:
Heat oil on medium to high heat. In a mixing bowl, whisk together the  flour and water. The consistency should not be too runny nor too thick. Add all other ingredients except the potato to the mixture and stir until well incorporated. Add the potato slices, and when well coated fry potato batches at a time. The potatoes should float immediately to the top and not be overcrowded. Remove from oil when potatoes are golden brown or slightly darker. Enjoy.
