Chili Con Soyrizo



This was a super simple and super tasty meal...Mmmmm!


Ingredients:
1/2-1 Tbsp oil
1/2 onion finely chopped
2 plump garlic cloves minced (or to taste, I love garlic)
1 green/red chili pepper, chopped (opt)
4 roma tomatoes finely chopped
1 package Frieda's Soyrizo
2 cans pinto beans, rinsed
1 cup water or more
Salt to taste (opt)


Directions:
Heat oil on medium heat. When oil is hot add onions and saute until onions are translucent. Then add garlic and chili pepper and saute for a few seconds then add soyrizo. When the soyrizo begins to brown/ or stick add the chopped tomatoes and a little water. Stir well and add salt if desired. Continue to add water until desired consistency then lower the heat to a simmer and cook another 8-10 minutes. Stirring occasionally. Enjoy!

*Opt add soy or cow cheese and/or sour cream if children find it spicy or omit the chili pepper all together
