Rainbow Chard

Ingredients:
1 bunch of Chard de-stemmed and Julienne cut
2-3 Tbsp Coconut oil or of choice
2 Shallots sliced
2 cloves garlic minced
2 dates chopped
1 1/2-2 Braggs Liquid Aminos (sub with Tamari)

Directions:
Heat oil on medium-high heat. Add Shallots, garlic, and dates. Cook 30 seconds until golden in color then add chard and Braggs. Cook for 5 minutes until Chard is wilted. Serve as a side and enjoy.

Tofu & Red Chili Chaat

1/2 carton of Wildwood Sprouted Tofu cut in Triangles

3 Tbsp coconut oil
1 garlic clove minced
1/2 in ginger minced
1/2 tsp cumin seeds
5 red hot chili, slit or remove seeds opt
1/2 tsp vindaloo seasoning or curry seasoning
1/4 tsp garam masala
1/8 cup cilantro for garnish

Directions
Fry tofu in 2 tbsp oil on med-high heat then remove and drain. Add 1 Tbsp oil and when hot add garlic ginger and cumin seeds. After the cumin seeds begin to sizzle add the chili peppers and tofu stir and lower heat to medium. When the chili have browned add the vindaloo and garam masala. Transfer food to a plate and garnish with cilantro. Enjoy!


Garden Fresh Pizza (Kale, Garlic, Arugala)







Ingredients:
1 gluten-free pizza crust
1 cup non-dairy cheese or liberally add
1/4 cup Smoked Sun-dried tomatoes julienne
1 cup kale julienne
1/4 cup arugla chopped
1 cup mushroom sliced
1 garlic clove minced
1 shallot sliced
1/4 cup red & yellow sweet peppers sliced
Opt tomato past 2-3 Tbsp

Add all ingredients in descending order. Bake on 325 degrees 13-17 minutes

Extra Cheezy Spinach Casserole

Ingredients:
2 bags (or 1) bags of Daiya Mozzarella
16 Oz fresh spinach chopped
5 garlic cloves chopped
1 medium onion minced
1/4- 1/2 tsp Himalayan pink salt
1/2 tsp black pepper
opt: 2 eggs scrambled
opt: 1 cup mushrooms chopped
Directions:
In a large mixing bowl combine all ingredients. In a greased casserole dish add spinach mix, cover, and cook on 400° for 30-45 minutes.

 

Ginger-Garlic Kale Salad

1 Tbsp garlic minced
1 Tbsp ginger minced
2 Tbsp olive oil
1/2 tsp smoked salt or to taste
1/2 Tbsp Braggs Liquid Aminos
2 small bunches of Kale destemmed and julienned

Directions:
Mix all ingredients except the kale. When ingredients are well mixed add kale and massage the kale with your hands to add a love and tenderness. Eat and enjoy or allow the kale to.marinate longer.
