Southern Fried Filets/ Faux Fish Filets


Ingredients:
Portobello Mushroom caps
Fry mix (1 cup Corn Meal with 1/2 cup Rice Flower)
Ziplock bag Quart size
Old Bay Seasoning to taste
Nori powder optional
Oil for deep frying

Directions:
Heat oil in deep fryer. Rinse, de-stem and de-gill by using a spoon to scoop out the stem and black "gills". Next, slice the caps into three parts (fillets). Season fillets with Old Bay Seasoning. Pour fry mix into the ziplock bag and shake. Then add fillets to the bag and shake vigorously, making sure to completely coat each fillet. Drop fillets into oil and fry until golden brown. Serve with lemon/lime, ketchup, mustard, or tartar sauce. Enjoy!




Strawberries With Raw Chocolate Mousse




Ingredients:
1 cup sliced strawberries
1Tbsp agave nectar

1/2 avocado
1/4 cup agave nectar or to taste
2-3 Tbsp raw cocoa powder or to taste

1large strawberry sliced for garnish



Directions:
Blend the cup of strawberries with 1 Tbsp of agave and pour into dessert glass. Rinse blender and add avocado, 1/4 cup agave, cocoa powder and blend until smooth and creamy. Pour mousse on top of the strawberry mixture. Garnish with strawberry slices. For best results, Refrigerator for 20 minutes or more.

Chick Salad

Ingredients:
2 cans chickpeas/garbanzo rinsed or 3 cups soaked and cooked
1/2 tsp rubbed sage
1/4 tsp celery salt
1/4 tsp garlic powder
1/4 tsp cumin powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper

1/2 cup vegan mayo
1 small fennel bulb thinly sliced or 2 stalks celery
Pinch of sugar or 1 Tbsp agave nectar for sugar free
Juice of 1 lemon
1 cup of halved grapes, seedless

Directions:
Process chickpeas and spices in a food processor until desired texture (chunky/creamy) then transfer chickpeas to a mixing bowl. Add remaining ingredients and stir until well incorporated. Enjoy on romaine lettuce leaves, stuffed in tomatoes, or gf pita chips. 



Speckled Piña Smoothie

Ingredients:
1 cup pineapple slices
2 bananas
1 Tbsp coconut sugar
1 Tbsp chia seeds
1/2 non dairy milk
Water, ice opt
Directions:
Blend all ingredients until smooth and ENJOY!!!


Restaurant Style Palak Paneer

Ingredients:
1 cup water
9 oz spinach
1/2 inch ginger chopped
1-2 serrano peppers chopped (opt de-seeded)
3 Tbsp olive oil
1/2 tsp cumin seeds
1/2 tsp tumeric powder
1 small onion minced
2 garlic cloves minced
2 medium Tomatoes puree
1/2 tsp cumin powder
1 Tbsp coriander powder
1 heaping pinch of methi leaves
1/4-1/2 cup cilantro leaves chopped
1/2 tsp garam masala
1/4 cup cream (plain non dairy almond or soy)

1/2 cup cubed and pan fried tofu

1/8 cup cilantro chopped to garnish

Directions:
Heat water to a boil then add spinach, ginger, and peppers. Turn off water and stir. When all spinach leaves has wilted, blend contents of the pot until a smooth paste and set aside. 
Heat oil on medium high. Add cumin seeds and turmeric and cook for 30 seconds. Add onions then garlic. Stir occasionally and cook for 3 to 5 minutes until onions begin to brown. Add tomato purée, stir, and cook until oil begins to separate and the purée begins to thicken to a paste. Then add cumin and coriander powders . Crush methi leaves in the palms of your hands until a powder and add it and cilantro to the tomato mixture and stir well. Add garam masala and cream and stir well. Finally stir in tofu and lower heat and allow to simmer for 15 or more minutes to enhance the flavor. Garnish with cilantro and Serve with rice or naan. Enjoy!!!



Apricot-Cilantro Rice

Ingredients: 
3 Tbsp extra virgin olive oil
2 cardamom pods
1 small onion finely chopped
1 small clove of garlic minced
2 fresh apricots sliced
1/3 cup cilantro
1 cup brown rice 
2 1/2 cups water or broth
Salt & Pepper to taste

Directions:
Heat oil on medium high heat. When oil is hot add the cardamom pods, onion, and garlic. Stir occasionally. When onions become translucent, add the apricots, cilantro, and rice. Cook for 5 minutes stirring often. Add water/broth and increase heat till boiling point. Stir well. When the mixture begins to boil, stir and cover with a lid. Lower the heat to Low. Cook rice for 25 minutes, never removing the lid during the cooking process. Finally, fluff and serve. Enjoy with any meal or time of day.





Sugar-Free Berry Vinaigrette For Your Summer Salads



Ingredients:

1/4 cup fresh sliced strawberries
1/4 cup fresh blueberries
1/4 cup agave nectar
1/4 cup vinegar
1/4 cup extra virgin olive oil
2 springs of dill or herbs of choice (optional)



Directions:

Blend all ingredients until smooth. Dressing should keep for about 5 days in the refrigerator. 

 Enjoy!




Lentil Loaf



Ingredients:
1/2 lb green/brown lentils soaked and cooked
1/2 tsp dried basil
1/4 tsp oregano
1/4 tsp parsley
1 garlic clove minced
1 stalk celery finely sliced
1/2 small onion finely chopped
1 cup oats
1 egg opt 
Salt & Pepper to Taste 

1/2 cup or more Ketchup for glaze 

Directions:
Blend all ingredients except the ketchup or all ingredients except the oats and celery. Pour the blended mixture into a greased baking dish and/or stir in oats and celery for texture. Spread the ketchup, covering the entire loaf. Then bake on 375* for an hour or until a toothpick comes out clean in the center and the loaf is firm. Serve with your favorite sides and ENJOY!


Sun-Kissed Strawberry Lemonade

Spring Is Here!!!

Are you enjoying the weather as much as I am? Lemons and Honey do wonders for the immune system during flu/cold season providing Vitamin C and antibacterial/antivirus properties among many antioxidants. I hope you enjoy this recipe!

Recipe:
Juice of 4 Lemons
1/2-1 cup sliced Strawberries
80 oz or 5 bottles of 16oz purified Water
1/4 cup Honey
1 3/4 cup Sugar or sweetener of choice (adjust to your taste)

Instructions:
Combine all ingredients and shake vigorously. Allow to set in the sun for an hour or more. Shake before your add the Lemonade to a tall glass of ice. Enjoy!
