Detox Recipe: Mason Jar Salad Mix

Why Use Mason Jars? 
 
I was well overdue for a detox and to get started I wanted to keep it fresh and clean without skimping out on the essentials-carbs and protein. Also, instead of my typical salad, I thought I'd add a little pizazz to my work lunch. What better eye candy than a beautiful rainbow salad in a mason jar? For the essentials, I added natural vegan proteins incorporating legumes and grains. For the best mason jar salad, I began by filling the bottom with salad dressing, then layering according to food type: dressing, legumes, grains*, fruit/vegetables,finally greens. Keeping the wet ingredients at the bottom prevents the entire salad from becoming soggy and stays fresh longer which is a wonderful feature for meal prepping (should stay fresh 4 days before use). I hope you enjoy this salad as much as I did!

Ingredients:
1/4  cup French Salad Dressing
1/4 cup Edamame
2/3 cup Quinoa
2/3 cup Mango
1/2 cup Strawberries
2/3 cup Blueberries
1/2 cup Spinach

Directions:
Assemble salad by adding salad dressing first, then layer each ingredient in order with Spinach as the last ingredient on top. When ready to get, give your salad a stir and ENJOY!
